Sweet Potato Pie Beignets

Fluffy fried pastries with a warm sweet potato filling.

What You Need:

  • ¼ the bag of Southern Belle Sweet Potato Pie Filling Mix (about ¼ cup)
  • Sweet Potatoes (Fresh or Canned):
    • Fresh: 1 medium sweet potato (about ½ pound cooked & mashed)
    • Canned: ¾ of a 15-ounce can, drained & mashed
  • 1 pack refrigerated biscuit dough
  • Oil for frying
  • Powdered sugar for dusting

Instructions:

  1. Flatten biscuit dough and place 1 tbsp of sweet potato filling in the center.
  2. Fold and seal edges.
  3. Heat oil to 350°F and fry until golden brown.
  4. Dust with powdered sugar before serving.
