Sweet Potato Pie Cheesecake Bars

A creamy cheesecake with a sweet potato pie swirl.

What You Need:

  • ½ the bag of Southern Belle Sweet Potato Pie Filling Mix (about ½ cup)
  • Sweet Potatoes (Fresh or Canned)
    • Fresh: 2 medium sweet potatoes (about 1 pound cooked & mashed)
    • Canned: 1.5 cans (15 oz each, drained & mashed)
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 egg
  • ½ tsp vanilla extract
  • 1 pre-made graham cracker crust

Instructions:

  1. Preheat oven to 350°F.
  2. Beat cream cheese, sugar, egg, and vanilla until smooth.
  3. Prepare the sweet potato filling (using half the mix).
  4. Layer cheesecake mixture and sweet potato filling in the crust.
  5. Bake for 35–40 minutes.
  6. Cool, chill, then slice.
