
Sweet Potato Pie Cheesecake Bars
A creamy cheesecake with a sweet potato pie swirl.
What You Need:
- ½ the bag of Southern Belle Sweet Potato Pie Filling Mix (about ½ cup)
- Sweet Potatoes (Fresh or Canned)
- Fresh: 2 medium sweet potatoes (about 1 pound cooked & mashed)
- Canned: 1.5 cans (15 oz each, drained & mashed)
- Fresh: 2 medium sweet potatoes (about 1 pound cooked & mashed)
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 egg
- ½ tsp vanilla extract
- 1 pre-made graham cracker crust
Instructions:
- Preheat oven to 350°F.
- Beat cream cheese, sugar, egg, and vanilla until smooth.
- Prepare the sweet potato filling (using half the mix).
- Layer cheesecake mixture and sweet potato filling in the crust.
- Bake for 35–40 minutes.
- Cool, chill, then slice.
